As reported at the 2018 Seafood Expo North America, seafood fishers, farmers and processors are collectively turning their attentions toward answering the modern consumer’s demand for three central trends: convenience, flavor and scale.
 
Delivering products that satisfy these demands translates to a variety of adjustments up the supply chain for seafood companies. Projects most common among attendees were: increasing automation, diversifying product types, updating software, labeling capabilities, and adjusting packaging.
 

SEA-ZING OPPORTUNITIES

The seafood industry is poised to capitalize on many rising trends – including the desire for sustainable proteins and exotic flavors, according to SeafoodSource.

At the show, brands showcased a variety of new products and non-traditional preparations. Seafood jerky, farm-raised species and alternative ingredients, such as seaweed, were among the variety featured. Producers shared their desire to maximize efficiency at their production facilities by leveraging new equipment and technologies to keep up with demand, and shift to new categories.
 

AHEAD OF THE “PACK”

Traceability and transparency were another main focus of the Expo. Per presentations and vendors in attendance, consumer preference is also the driving factor affecting packaging decisions among seafood companies.

Major trends to watch in the space include clear, transparent packaging, portioned and cut-to-size items, and ready-to-eat or pre-marinated products. Attendees explored how the state-of-the-art packaging design and seafood-specific ERP systems at the show could help them meet these specifications and manage more complex production processes.
